Healthy Pop Tarts

Ingredients
  

  • 1/2 cup greek yogurt
  • 1 tbsp almond milk
  • 2 tbsp honey
  • 1 3/4 cup oat flour
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 2 tbsp raspberry jam

Instructions
 

  • Preheat oven to 350F and prepare a baking sheet by lining it with parchment paper.
  • Start by making the dough by combining the oat flour, salt and baking powder together in a medium bowl. 
  • Next, add in the greek yogurt, almond milk and honey next and mix until a dough is formed. 
  • Flour a clean working surface with more oat flour and knead the dough for a few minutes. 
  • Then, roll it out into a rectangle, about 1/4" thick, and cut out 3 equal rectangles to make 2 healthy pop tarts. 
  • Add three of the dough slices to the prepared baking dish and then add on about 1 tbsp of your favorite jam to the center. 
  • Add on the top half of the dough and using a fork, mend the edges together. 
  • Bake for 15 minutes. Remove from the oven and let cool slightly. 
  • Pile high with rich greek yogurt and sprinkles. Dig in!
