Mozzarella Crostini w/ Avo-Pesto Spread
Ingredients
- 1 cup grape tomatoes
- 2 tbsp pesto
- 1 avocado
- 6 slices fresh mozzarella
- 2 tbsp olive oil
- 1 baguette
- 1/3 cup chopped fresh basil
Instructions
- Slice your bauguette into 6 rounds. Take the olive oil and pan fry the bread on medium heat, about 1 minute on each side.
- In a small bowl combine the pesto & avocado until fully incorporated.
- Pile your crostinis high with the avo-pesto spread, fresh mozzarella, grape tomatoes, and fresh basil. I also like to top mine with cracked pepper & crushed red pepper flakes.
