Looking for a healthy lunch idea? You’ve found it! When I first tried this recipe I fell head over heels and had it for lunch 5 days in a row!

Mozzarella Crostini w/ Avo-Pesto Spread

Ingredients
  

  • 1 cup grape tomatoes
  • 2 tbsp pesto
  • 1 avocado
  • 6 slices fresh mozzarella
  • 2 tbsp olive oil
  • 1 baguette
  • 1/3 cup chopped fresh basil

Instructions
 

  • Slice your bauguette into 6 rounds. Take the olive oil and pan fry the bread on medium heat, about 1 minute on each side.
  • In a small bowl combine the pesto & avocado until fully incorporated.
  • Pile your crostinis high with the avo-pesto spread, fresh mozzarella, grape tomatoes, and fresh basil. I also like to top mine with cracked pepper & crushed red pepper flakes.
